An Apple A Day ...


You know that school is back in full swing when the homework starts rolling in! Last week Taylee brought home a "Family" Homework Assignment and we are in need of your help. Her assignment is to pick a recipe that has apples in it. Then we are supposed to make the recipe and eat it. After we taste it she has to make a poster with the results of what we created. Simple enough ... Ugh. Well, I went to my recipe book and I have one recipe that contains any apple ingredient in it and it is applesauce. So, I decided that it might be fun to see if any of you out there have any yummy recipes that have apples in it.

I will be sending (I love all the giveaways that I have seen lately) the winner, which will be done randomly (Taylee will pick which recipe she would like to try out ... I won't tell her any names), these cute WITCH blocks that will look so cute on your shelf for Halloween! Perfect Apple Pie

7 Granny Smith Apples, 1 cup Sugar, 2 Tablespoons flour, 1 teaspoon cinnamon, dash of salt and nutmeg
Pare apples and slice thin. Combine rest of ingredients with apples. Pour into pie crust. Dot with butter. Adjust top crust. Brush lightly with milk and sprinkle with sugar. Bake 400' for 50 minutes.

This really is the BEST apple pie recipe. ~Wendy

OK, this is my favorite apple treat. It probably won't qualify for Taylee's project, but hopefully it will qualify me to win your CUTE prize!! ;)

Caramel Apple Dip
8 oz. softened cream cheese (not low fat)
1 cup packed brown sugar
1 tsp. vanilla
Sliced apples, for dipping

Beat all ingredients, except apples, together for at least 5 minutes on high, till the brown sugar has "melted" into the cream cheese and it's very creamy. Serve with apple slices for dipping.

We serve this (the apples and dip) at Enrichment in the fall with salted nuts for a light treat. Everyone always LOVES it!

Apple Crisp
8-12 medium apples sliced & peeled
3tbsp sugar
2 tsp cinnamon
1 cup whole-wheat flour (or regular flour)
1 cup packed brown sugar
1/2 cup rolled oats
1/2 cup melted margarine/butter
*Spread sliced apples in greased pan
*Blend sugar & cinnamon-sprinkle over apples
*Combine flour, brown sugar, oats, & butter: Mix with fork until crumbly; Put over apples
*Bake for 35 minutes @350 or until apples are tender & bubbly
**For easy recipe--
Use 1-2 cans of apple pie filling
Spread in bottom of pan, mix the flour, brown sugar, oats, & butter
Put over apples
Cook until topping is crisp!!
Serve with Vanilla ice cream & Caramel!!
Yummy! Yummy!

So I totally cheated and got this off a website but it sounds way yummie. And if you pick this one you dont have to send me the prize (i already have it) so send it to the next winner :-)

INGREDIENTS
1 cup packed brown sugar
1/2 cup butter, softened
1/4 cup shortening
1 3/4 cups all-purpose flour
1 1/2 cups quick cooking oats
1 (14 ounce) package individually wrapped caramels, unwrapped
1 teaspoon salt
1/2 teaspoon baking soda
4 1/2 cups apple - peeled, cored and chopped
1 tablespoon lemon juice
3 tablespoons all-purpose flour

DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
In a large bowl, cream together the brown sugar, butter and shortening until smooth. Combine 1 3/4 cups flour, oats, baking soda and salt; stir into the creamed mixture until well blended. Set aside 2 cups of this mixture. Press the remaining mixture into the bottom of an ungreased 9x13 inch baking pan.
In a medium bowl, toss apples with lemon juice, then toss them with the 3 tablespoons of flour. Spread the apple mixture evenly over the prepared crust. In a small saucepan over medium heat, melt caramels, stirring frequently until smooth. Pour the melted caramels evenly over the apples. Sprinkle the reserved oat mixture over the top of the apple layer. Press down lightly.
Bake for 25 to 30 minutes in the preheated oven, until the top is golden brown and the apples are tender. Cut while slightly warm and refrigerate any leftover bars.

Carmel Apples
Put sticks into the apples.
dip your favorite apples in your melted bag of carmels. Put on sugar coated wax paper. They are the best.
This is kind of lame but it is my favorite fall Apple Treat.

Darn it, is it after noon yet?? :-) I knew I shouldn't have tried to spend less time blogging this week. Oh well, my apple recipe is the apple crisp from betty crocker, my mom used to make it:

4 medium tart cooking apples, sliced (4 cups)
3/4 cup packed brown sugar
1/2 cup Gold Medal® all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1/3 cup butter or margarine, softened
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
Cream or Ice cream, if desired

1. Heat oven to 375ºF. Grease bottom and sides of 8-inch square pan with shortening.
2. Spread apples in pan. In medium bowl, stir remaining ingredients except cream until well mixed; sprinkle over apples.
3. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with cream.

However, I don't cook, so if you make some, feel free to share!
